Control vs Confort / Optimizing server side to capitalize faster or hand it to the Big Corps?

I have had a different approach in the last few years for how to host, manage and deploy services I use and websites, both for recreation and business purposes.
I have used lately and mostly a Digital Ocean droplet system, where I buy the domain and run everything on his own server, small server to start and bubble the project up.
Until I started to ship more ideas, this approach did not fit enough, for some of the new ideas, like for example Listings.mx we are currently planning on falling back on the most ancient sales technique, cold calling and emailing in order to test the idea faster, made this approach kind of difficult, email hosting opened the door. I now need one or two emails, then it came Somexco, where we mostly use email to reach providers and receive quotations for the projects we are working on.

So now, droplets are falling a little behind, so I switched back to VPS, a larger VPS and try to scale it and move it around in bigger chunks, this leading to using Plesk right now to ship and deploy but now I have to learn and master Plesk and again meet one of my old friends, Docker. I had to switch from comfort to a new awkward position where everything gets broken.

I lost some hours making Cloudflare work on this site and the new ones, it was not necessary, and learning is good but when I am mostly focused on shipping this is kind of a fallback feel, setting this up has taken me a couple of days, where I haven’t even added a line of code on pretty urgent implementations.
So this is the constant fight, what’s the best tool to use and what’s the business with more possibilities on a near future.

I haven’t got the email part, I’m using Space Mail for somexco and GoDaddy for listings. Will need to set a time again to learn and get a workflow working on this things, meanwhile all of my ideas get stucked on price-efficiency new approached.

Thanks for reading, hope I can come back and get advances on most of my work and not only words.
